Since Adora Belle, Dokuwiki change the fonts when printing. It seems to fallback on somethings like Time New Roman. It's doing this in both Firefox and IE on a Windows 7 PC.

The new default template falls back to the browser font. So, whatever your browser's default font is, will be the font in which it is printing.
I don't think that's a problem. What do you propose instead? (And keep in mind, it needs to be supported by the majority of Operating Systems and needs to look good in print.)

I'm no expert, but I would like that printing behaves the way it was before Adora Belle. I think that if a user is able to see the fonts properly on the screen, it should be possible to print it with the same fonts. Maybe an admin option with "Print with template fonts" and "Print with default browser fonts".

Adora Belle didn't change anything, it's this template which has different print styles than the other. You will find that other templates have different print styles. So, it's not a core DokuWiki thing and therefore shouldn't be controlled by a config option.
It is not a good practice to choose the same font for print as for the screen, because the same font will look very different in different media. It is also good practice to choose a serif font for printing (although there are a few sans-serif fonts which also work well for printing). We can give the new default template a print font, but it should be a well-chosen font stack, so that it looks good across all OSs. It might be that the screen font works as well, but I cannot test it currently.

Ok, I understand. So I changed my browser default printing font for a different one. I also understand that Serif fonts can be more appropriate for printing, even if I do prefer the sans-serif one. Personnaly, I would suggest to take somethings like Calibri. And if we have to go with a serif font I'll pick Garamond.
